Sue’s Pumpkin Soup

Delicious Soup

I don’t use recipes but this is one that I’ve made up and it works perfectly every time for a delicious pumpkin soup. This recipe makes around 10 serves.

You will need:
A medium sized Queensland Grey Pumpkin (if you can’t get this then you need an alternative fleshy pumpkin)
4 large Potatoes
Butter
Cream
Salt
Pepper
Vegetable Stock (either make your own or buy a vegetable stock)
A pot of boiling water

Preparation
Peel the potatoes and cut them into squares and place in boiling water
Peel the whole pumpkin and place in boiling water
When potatoes and pumpkins are soft, drain most of the water out but leave a little at the bottom (about an inch)
Mash the potatoes and pumkins and add butter so that it is a smooth consistency
Place back on the gas and put in vegetable stock to cover the mashed potato and pumpkin
Pour in a cup of cream
Add Salt and Pepper to taste
Leave to simmer for 10 minutes

Serving Suggestions
Serve hot with a slice of bread or with Cheese and Chilli Muffins
